Codfish with bread and dried fruit

Igredients

400 gr clean spinach
salt and pepper
500 gr of boiled cod
2 onions
2 cloves of garlic, olive oil 1dl
1 gold leaf, bread crumb 300 gr
100 gr of almond and walnut kernels

Preparation method

Bake spinach in boiling water with salt for 3 minutes. Then rinse them in cold water and let them drain. Clean the cod skin and bones and flake it. Peel the onions and garlic, chop the garlic and sauté them in half the oil. Then add the onion, cut into thin half-moons and bay leaf, stir and cook until onion is soft.

Then add the onions to the codfish mix the salt and rectify. Add a pinch of pepper and stir. Preheat the oven to 180 º. Cut the kernels of corn bread into pieces, throw them into a food processor, combine the almond and walnut kernels, call and let poking until a kind of grainy.

Transfer to a bowl, add the remaining olive oil and mix well. Spread the spinach in the bottom of an oven dish, cover with a mixture of cod and spread the mixture over the bread. Bake until surface is golden brown.
